Young Chefs' Kitchen: Make yourself some delicous shrimp scampi

This week, Chef Latoya Panton and her 'young chefs' take us to school on how to prepare their version of the delicious Italian seafood dish, Shrimp Scampi.

Here is the recipe:

Shrimp Scampi



- 1 (8 ounce) package angel hair pasta

- ¼ cup (1/2 stick) unsalted butter

- 4 cloves minced garlic

- Salt to taste

- ¼ tsp. red pepper flakes

- 1 pound shrimp, peeled and deveined

- 1/2 cup stock or dry white wine

- 1 Tbsp. Capers

- ¼ cup (1/2 stick) unsalted butter

- 1 tablespoon chopped fresh parsley



1. Bring a large pot of salted water to a boil. Stir in pasta and return pot to boil. Cook until al dente. Drain well. Season the shrimp with the garlic, salt, pepper and red pepper flakes.

2. Melt butter in a large saucepan over medium heat. Add olive oil. Stir in the seasoned shrimp. Cook, stirring constantly, for 3 to 5 minutes.

3. Stir in the stock or wine. Bring to a boil and cook for 30 seconds while stirring constantly. Add the Capers and butter to finish.

4. Mix shrimp with drained pasta in a serving bowl. Sprinkle with parsley. Serve immediately.
